Mind Over Matter

Black Beans and Rice....YUMMY!

Tomato and Buffalo Mozzarella

Chicken Cream Soup

Last week, after finally deciding on a budget with my husband, I decided to not only stick to a goal for groceries and food but challenge myself to spending less; $50 a week, including food we eat out. My original plan was to include weekends and visitors into my plan but I must say that is harder than I originally thought.

Last Monday I went to the grocery and spent a total of $36 dollars, and was quite proud of myself. I bought fresh tomatoes, buffalo mozzeralla (my favorite), olive oil, spaghetti, cereal, carrots, lettuce, eggs...you get the picture. What I found is that I like to eat out more than I originally thought, and that a busy lifestyle makes it hard to always make delicious HEALTHY meals.Aunt Belle, Me, Emily

We were doing fine until the weekend, on Saturday I went out shopping with my Great Aunt from New Jersey all day and Mike was out with his brother! So, we went over but it was SO worth spending that precious time with family and friends!

I do think this last week was a success. As you can see in the pictures above I made a wonderful snack of tomatoes and mozzeralla, a veggie and egg fried rice dinner one night (not pictured but I promise I made it), chicken cream soup, and rice and beans. Why you only see a few pictures?? I eat with family quite a bit, so I can't claim to have made every meal this week! My mother lives just around the corner and having been proud of myself for planning meals this last week, when she called to invite us for a family dinner, my mind won! I love eating with my husband and family!

For those of you that are trying to stick to a budget, I promise you this can be done...I must say I am not as diligent as I once thought I was but I know it's possible.

Advice - try and go to Aldi's if you have one close by, I cut my grocery list almost in half by going there first. You can't always get everything you need but I usually can get pretty close. Also cut out the brand names, you can usually find the off brand that is just as good, unless some of you are super picky and I can't help you with that! It's all mind over matter, right?
